The grilled vegetable skewers are a rich and colorful side dish to enjoy with company. To make these skewers, I used various types of vegetables cut into chunks and purple potatoes. I threaded the vegetables onto wooden skewers by color to create a rainbow effect. I seasoned the skewers with oil and rosemary and cooked them on the grill. Alternatively, you can cook them on a griddle or over coals.

Ingredients
- 6 cherry tomatoes
- Half red bell pepper
- 1 slice pumpkin
- Half yellow bell pepper
- 6 yellow cherry tomatoes
- Half green bell pepper
- 1 zucchini
- Half red onion
- 1 purple potato
- as needed chopped rosemary
- as needed extra virgin olive oil
- as needed salt

Preparation
To make the grilled vegetable skewers, wash and clean the vegetables and the purple potato. Slice the zucchini into rounds, the pumpkin into cubes, the peppers into pieces, and the onion into strips.
Peel the purple potato and cut it into wedges. Cook it in plenty of boiling water for about 5 minutes, or until cooked.
Place all the vegetables and potatoes in a bowl and season with a drizzle of extra virgin olive oil, some rosemary, and salt. Mix with a spoon.
Assemble the skewers in this order: take a skewer stick, thread a wedge of purple potato, the onion, the zucchini, the green bell pepper, a yellow cherry tomato, the yellow bell pepper, a pumpkin cube, the red bell pepper, and a red cherry tomato.
Cook the skewers over coals, or on a grill or griddle with a drizzle of oil. Cook until the vegetables are tender and well-cooked (or to your preference).
