The Curried Carrots with Parsley are a vegan side dish with a spicy flavor, ideal for accompanying a first course or main dish. To make this recipe, I first boiled the carrots, then sautéed them in a pan with curry and parsley. Easy and quick to make, these carrots will be appreciated by the whole family!

Ingredients
- 14 oz carrots
- 1 bunch parsley
- 1 tbsp curry
- 1 clove garlic
- to taste extra virgin olive oil
- to taste salt
Preparation
To make the curried carrots with parsley, wash and trim the carrots, then peel and slice them into rounds.
Cook the carrots in plenty of boiling water for about 10-15 minutes, until the desired tenderness is reached.
In a pan, pour a drizzle of extra virgin olive oil, the curry, garlic, and chopped parsley.
Place on low heat, add a ladle of water and cook to dissolve the curry and until you obtain a sauce.
When the carrots are cooked, using a slotted spoon, remove them from the water and place them into the pan with the curry and parsley.
Remove the garlic, sauté the carrots in the pan and serve. Enjoy your meal!
