Curried Carrots with Parsley

The Curried Carrots with Parsley are a vegan side dish with a spicy flavor, ideal for accompanying a first course or main dish. To make this recipe, I first boiled the carrots, then sautéed them in a pan with curry and parsley. Easy and quick to make, these carrots will be appreciated by the whole family!

Curried Carrots with Parsley
  • Difficulty: Easy

Ingredients

  • 14 oz carrots
  • 1 bunch parsley
  • 1 tbsp curry
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste salt

Preparation

  • To make the curried carrots with parsley, wash and trim the carrots, then peel and slice them into rounds.

  • Cook the carrots in plenty of boiling water for about 10-15 minutes, until the desired tenderness is reached.

  • In a pan, pour a drizzle of extra virgin olive oil, the curry, garlic, and chopped parsley.

  • Place on low heat, add a ladle of water and cook to dissolve the curry and until you obtain a sauce.

  • When the carrots are cooked, using a slotted spoon, remove them from the water and place them into the pan with the curry and parsley.

  • Remove the garlic, sauté the carrots in the pan and serve. Enjoy your meal!
