Chickpea Flatbread – Airfryer or Oven

The chickpea flatbread is a vegetarian, gluten-free, and lactose-free dish that can be cooked in the air fryer or oven. It is very easy to make and requires a few hours of rest before cooking. The chickpea flatbread is composed of chickpea flour, water, and extra virgin olive oil, and you can customize it to your liking by adding spices and herbs: for example, I added curry and oregano.

Chickpea Flatbread

Ingredients

  • 2 oz chickpea flour
  • cup water
  • 2 tsp extra virgin olive oil
  • to taste salt
  • 1 sprig oregano (or rosemary)
  • 1 tsp curry (optional)

Preparation

  • To make the chickpea flatbread, pour the chickpea flour in a small bowl and gradually add the water at room temperature.

  • Mix well with a whisk to avoid lumps and until you get a liquid and homogeneous mixture.

  • Cover the bowl with plastic wrap and let the mixture rest for 4-5 hours, or overnight.

  • After the resting time, use a slotted spoon to remove the foam that will have formed on the surface.

  • Add the oil, oregano, curry, and salt to the mixture. Mix well to combine the ingredients.

  • Grease a baking pan (I used an 18 cm diameter pan) and pour the mixture.

  • Oven cooking. Bake in the preheated oven at 428°F for 20-25 minutes, until fully cooked and golden.

  • Air fryer cooking. Cook at 392°F for 15 minutes, until golden.

  • Once cooked, remove from the oven and serve. Enjoy your meal!
