Also ideal as a one-dish meal, these turkey bites are floured and then cooked in a pan; afterwards, the boiled cauliflower and raisins are added, and served with toasted pine nuts. Ingredients
- 9 oz turkey breast
- to taste rice flour
- 1 lb cauliflower
- 0.7 oz raisins
- 0.35 oz pine nuts
- 1 sprig rosemary
- to taste leek
- to taste extra virgin olive oil
- to taste salt
Preparation
To make the turkey bites with cauliflower, raisins, and pine nuts: wash and trim the cauliflower, cutting it with a knife, separating the florets from the stem.
Cook the cauliflower florets in plenty of boiling water. Once ready, drain them and put them in a bowl.
Cut the turkey into bite-sized pieces and coat them in flour.
In a pot, pour a drizzle of extra virgin olive oil and some chopped leek. Put on the stove over low heat and let the leek soften.
Then add the turkey bites and brown them for a few minutes over moderate heat.
Add some water and the rosemary and let it cook over low heat for about ten minutes.
Afterwards, add the cauliflower and raisins and let them blend for 5 minutes. Finally, add salt.
In a small non-stick pan, toast the pine nuts.
Serve the turkey bites with the pine nuts and enjoy. Bon appétit!
