Shrimps with Strawberry Jam and Lupin Cream

The shrimps with strawberry jam, lupin cream, and confit cherry tomatoes is an elegant and refined main course, perfect for a romantic dinner for two to impress your beloved on Valentine’s Day. I marinated the shrimps with strawberry jam before sautéing them in a pan; I served the shrimps with a lupin cream, confit cherry tomatoes, and strawberry jam. Your partner will be delighted!

Ingredients

  • 16 shrimps
  • to taste strawberry jam
  • 1 sprig dried oregano
  • to taste extra virgin olive oil
  • to taste salt
  • 10 confit cherry tomatoes
  • 7 oz lupins
  • 1 tbsp ricotta
  • 1 tsp curry
  • 1 sprig rosemary
  • to taste extra virgin olive oil
  • to taste salt
  • to taste water

Preparation

  • To prepare the shrimps with strawberry jam and lupin cream, wash the shrimps under running water, removing the head and shell. Then remove the internal intestine: cut the back of the shrimp with a knife and gently pull it out, trying not to break it.

  • Place the shrimps in a bowl, add the oregano and a tablespoon of strawberry jam. Mix with a spoon and let it rest for 30 minutes.

  • Shell the lupins and pour them into a bowl with the curry and rosemary. Start blending with the immersion blender and add the oil and water gradually.

  • Blend until a creamy and homogeneous (slightly grainy) mixture is obtained. Add salt and finally add the ricotta. Transfer the cream into a piping bag without a nozzle.

  • In a pan, heat a drizzle of extra virgin olive oil over moderate heat; then add the shrimps and sauté them. Add a pinch of salt and cook the shrimps for three minutes on each side, until they are pink and cooked.

  • Take two serving plates and form a heart in the center of each with the lupin cream.

  • Place the shrimps on the cream, placing them next to each other to form small hearts.

  • Garnish the plates by adding the confit cherry tomatoes and strawberry jam.
