The sandwich with lupini, avocado, and carrots is a rich and tasty vegetarian (and vegan) idea, perfect for enjoying at a brunch or for a delicious meal. This sandwich consists of a layer of guacamole (in a version revisited by me), sautéed spiced carrots, and a layer of lupini cream. Easy to make, the sandwich with lupini, avocado, and carrots will surprise you with its delicate and at the same time exotic flavor.

Ingredients
- 7 oz lupini
- 1 teaspoon curry
- 1 sprig rosemary
- as needed water
- as needed salt
- as needed extra virgin olive oil
- 7 oz avocado
- lemon juice
- 4 cherry tomatoes
- as needed extra virgin olive oil
- as needed salt
- 2 carrots
- 1 sprig dried oregano
- 1 teaspoon curry
- as needed extra virgin olive oil
- as needed salt

Preparation
To make the sandwich with lupini, shell the lupini and place them in a bowl with the curry and rosemary. Start blending with the immersion blender and gradually add the oil and water.
Blend until you obtain a creamy and homogeneous mixture (slightly grainy). Salt at the end.
In a blender, place the avocado pulp, add the lemon juice and gradually add the extra virgin olive oil, blend until you obtain a puree and transfer it to a bowl.
Wash and clean the cherry tomatoes, cut them into small cubes and incorporate them with the avocado. Salt at the end.
Wash and clean the carrots, then cut them into strips or julienne.
In a pan, pour a drizzle of extra virgin olive oil and heat it over low heat.
Then pour the carrots, oregano, and curry into the pan. Stir and sauté the carrots in the pan. Then remove from heat and salt if necessary.
Take the sandwich bread and proceed with the composition of the sandwich starting from the bottom: take the whole slice of bread, spread a layer of avocado, then form a layer of carrots.
On the other slice of bread, spread the lupini cream and close the sandwich.
Serve and enjoy your meal!
