Baked Shrimp with Pistachios
  • Difficulty: Easy
  • Cost: Medium
  • Preparation time: 15 Minutes
  • Portions: 2 People
  • Cooking methods: Oven

Ingredients

  • 12 oz shrimp
  • lemon juice
  • 0.7 oz panko (or breadcrumbs)
  • 0.7 oz chopped pistachios
  • 1 sprig dried oregano
  • 1 tsp curry
  • to taste extra virgin olive oil
  • to taste salt

Preparation

  • To make baked shrimp with pistachios, rinse the shrimp under running water, remove the shell while leaving the head and tail. Then remove the intestine: make a cut along the back of the shrimp with a knife and pull it out gently, trying not to break it. Place them in a colander to dry slightly.

  • Marinate the shrimp with a mixture of extra virgin olive oil and the juice of half a lemon.

  • In a bowl, combine the panko with the chopped pistachios, oregano, and curry. Mix with a spoon.

  • Salt the shrimp and coat them with the breading, ensuring it adheres on both sides.

  • Line a baking sheet with parchment paper and place the shrimp on it. Drizzle with a little extra virgin olive oil and bake in a preheated oven at 392°F for 15–20 minutes, until fully cooked and golden brown.

  • Once cooked, remove from the oven and serve the shrimp. Enjoy your meal!
