Ingredients
- 12.35 oz shrimp
- lemon juice
- 2/3 cup panko (or breadcrumbs)
- 1/4 cup chopped pistachios
- 1 sprig dried oregano
- 1 tsp curry
- to taste extra virgin olive oil
- to taste salt
Preparation
To prepare the baked shrimp with pistachios, wash the shrimp under running water, remove the shell, leaving the head and tail. Then remove the internal intestine: cut the back of the shrimp with a knife and gently pull it out, trying not to break it. Place them in a colander to dry slightly.
Then marinate the shrimp with an emulsion of extra virgin olive oil and the juice of half a lemon.
In a bowl, combine the panko with the chopped pistachios, oregano, and curry. Mix with a spoon.
Salt the shrimp and bread them with the coating, making it adhere on both sides.
Line a baking tray with parchment paper and lay the shrimp on it. Drizzle with a little extra virgin olive oil and bake in a preheated oven at 392°F for 15/20 minutes, until fully cooked and golden.
Once cooked, remove from the oven and serve the shrimp. Enjoy your meal!
