Meringues (Meringue Cookies)

Meringues (or meringue cookies) are tasty and crunchy sweets made with just two ingredients. Meringues are called differently depending on the region; for example, in my area, they are called spumini. Meringue is a basic pastry preparation made using egg whites and sugar (granulated or powdered); then, with the help of a pastry bag, many small puffs (spumini or meringues) are created. The secret to success is to beat the egg whites well with the sugar (I recommend using a stand mixer) and bake them very slowly in the oven so that they become well-dried and crumbly.

  • 160 g egg whites
  • 320 g sugar

Preparation

  • To make the meringues, put the egg whites in a large bowl (of the stand mixer) and beat them until very stiff, gradually adding the sugar.

  • To ensure that the egg whites are well beaten, you should obtain a glossy and frothy mixture, and when you lift the beaters, it should form peaks.

  • Transfer the egg whites to a pastry bag with a star tip (you can also use other tips, depending on the shape you want to give the meringues).

  • Line a baking sheet with parchment paper and form the meringues in the desired size.

  • Bake the meringues in a preheated oven at 212°F (100°C) for one hour, and once baked, let them cool in the turned-off oven with the door slightly open.
