The cauliflower nuggets are crispy and spicy bites to serve as a vegetarian main course or side dish. I made these nuggets with boiled cauliflower florets, coated in batter and finally in a breadcrumb and panko coating (a breadcrumb typical of Japanese cuisine). You can cook these nuggets in the air fryer or fry them in hot oil. Served with a sauce of your choice, the cauliflower nuggets will win everyone over, even those who don’t particularly love this vegetable!

Ingredients
- 1 cauliflower
- 2.1 oz rice flour
- 1/3 cup water
- 1 teaspoon curry
- 1 sprig dried oregano
- 1 sprig rosemary
- 1 teaspoon curry
- 2 tablespoons panko (or gluten-free breadcrumbs)
- 1.05 oz breadcrumbs (gluten-free for those intolerant)

Preparation
To make the cauliflower nuggets, wash and clean the cauliflower, cut it with the help of a knife, separating the florets from the stem.
Cook the cauliflower florets in plenty of boiling water. Once ready, drain them and let them cool down.
In a bowl, prepare the batter: pour the rice flour and curry, then add the water and mix until smooth and lump-free.
In a plate, pour the panko, breadcrumbs, curry, rosemary, and oregano, and mix well.
Dip the cauliflower florets in the batter, letting the excess drip off, and then coat them in the breadcrumbs.
Lightly grease the basket of the air fryer and place the nuggets in it.
Pour a drizzle of extra virgin olive oil over the nuggets and cook them in the air fryer at 400°F for 15 minutes, or until golden.
For those who don’t have an air fryer. Fry the nuggets in hot oil until golden.
