The homemade chickpea pizza is the ideal choice for those who want to enjoy a different yet protein-rich pizza. In this recipe, cooked and mashed chickpeas are added directly to the dough, making it tasty, nutritious, and naturally protein-rich, without the need for special flours or leavening.

Ingredients

  • 5 oz cooked chickpeas (well-drained and then mashed or finely pureed)
  • 2/3 cup water
  • 3/4 cup all-purpose flour
  • 2 tsp olive oil
  • 1 tsp fine salt
  • 1 pinch sugar
  • 1 tsp instant yeast for savory preparations
  • to taste olive oil and rosemary (turmeric, coriander, and cumin as desired)

Steps

  • 1 – Drain the chickpeas well, whether you boiled them yourself or bought them pre-cooked in a jar.

    2 – Blend the chickpeas with the water to create a creamy puree, put them in a bowl and add the oil and salt. If desired, you can also add a few pinches of turmeric, cumin, and coriander for an extra touch of magic.

    3 – Add the flour and the instant yeast for savory preparations. Mix the mixture well, which will be soft and not as firm as traditional homemade pizza dough.

    4 – At this point, oil an 8×8 inch pan and pour the mixture into it. Level it well, and before baking the pizza, drizzle a little olive oil and a sprinkle of chopped rosemary on top.

  • 5 – Preheat the oven, or preheat the air fryer to 400°F for 5 minutes.

    6 – Bake the chickpea pizza at 400°F for 15 minutes. If necessary, extend the cooking time by another 5 minutes.
