Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 cup cornstarch (or potato starch)
- 7 oz oranges (organic, whole, pulp and zest)
- 2/3 cup sugar
- 1/3 cup sunflower oil (80)
- 3 1/3 tbsp plant-based milk
- 2 tsp baking powder (Paneangeli)
- 1 packet vanillin (powdered)
- to taste lemon zest (grated)
- to taste powdered sugar
Steps
Select 1 or 2 healthy and organic oranges, because you will use everything, both the pulp and the peel. Wash them well under running water and cut them into pieces, removing the seeds.
Put the oranges in the blender with the grated lemon zest and start blending.
Add the oil, milk, and sugar and continue blending until you get a smooth and creamy consistency.At this point, add the flour, cornstarch, baking powder, and vanillin, and blend again to mix the ingredients well.
Take a cake pan suitable for the air fryer, 8 inches in diameter, grease it and flour it, or spray with non-stick spray.
Pour the mixture into the pan and gently tap the pan on the work surface to release any bubbles from the batter.
Preheat the air fryer to 320°F for 3 minutes.
Place the pan in the basket and bake the orange cake at 320°F for 30-35 minutes. The time varies from fryer to fryer, do the toothpick test, if it comes out dry, without traces of batter, it is cooked.
Let it cool in the pan and then place it on the serving tray, sprinkle the cake with powdered sugar and garnish as desired with fresh orange slices.
