The result is like eating a breaded, meaty, and tasty vegetable cutlet, which can become a valid alternative in vegetarian diets. For the vegan version, simply replace the eggs with a batter of water and chickpea flour and the grated parmesan with nutritional yeast flakes.

Ingredients
- 14 oz Pleurotus mushrooms (net weight, after cleaning)
- 3 oz breadcrumbs
- 3 oz flour (any type is fine)
- 3 tbsp grated parmesan
- 3 eggs (large)
- to taste salt, pepper, garlic powder, parsley
- to taste seed oil (for frying)
Steps
Clean the mushrooms by removing the end part of the stem, making the cap as flat as possible.
In a bowl, mix together the breadcrumbs, flour, and grated parmesan.
In another bowl, beat the eggs and add chopped parsley, salt, pepper, and garlic powder to taste.
Pass each mushroom through the breadcrumb and flour mixture and then into the beaten egg.
Fry in hot oil, four mushrooms at a time based on their size, 4 minutes on one side and 4 minutes on the other for large ones. For smaller ones, 3 minutes on both sides will suffice.
Once cooked, drain the pleurotus mushrooms from the oil by placing them on absorbent paper.
Serve them simply with a squeeze of lemon and fresh chopped parsley, or with a yogurt and lemon sauce.
