The focaccia with liquid dough in the air fryer, soft inside and slightly crispy outside, will be made with green olives and olive oil. Very easy and quick to prepare, without leavening and kneading, ready in 20 minutes and it’s as good as the margherita pizza with liquid dough or the focaccia with tomatoes and potatoes also made in the air fryer.
Follow the recipe’s measurements and use a round pan with a diameter of 7-8 inches that fits your air fryer. I have a 5.5-liter Cosori with a single top heating element, and I get a soft pizza inside and slightly crispy on the edges. The yeast I used is Paneangeli yeast for sweet or savory rapid cooking in the air fryer, available in well-stocked supermarkets or on Amazon (click the link), but in its absence, you can also use instant powder yeast for savory preparations.

Ingredients
- 3/4 cup all-purpose flour (for pizza)
- 1/3 cup water (room temperature)
- 2 tsp milk (can be plant-based)
- 2 tsp olive oil
- 4 g instant yeast for savory preparations (or Paneangeli for rapid cooking in air fryer)
- 1/2 tsp salt
- 1 pinch sugar
- 15 pitted green olives
- to taste olive oil
Steps
In a small bowl, put the room temperature water, milk, olive oil, salt, and a pinch of sugar. Stir to dissolve the salt and sugar, then add the sifted flour and instant yeast.
Mix the mixture with a fork until it becomes smooth and homogeneous, like a fluid batter (see photo below).
Grease a 7.87-inch diameter round pan, preferably non-stick and suitable for the air fryer.
Pour the fluid mixture for the pizza base into the center and let it spread over the entire surface of the pan.
Add the pitted green olives on the focaccia base and drizzle with a generous amount of olive oil.
Preheat the air fryer to 392°F for 5 minutes.
Place the pan in the air fryer basket and cook the focaccia at 392°F for 15 minutes.
Once cooked, remove the focaccia from the air fryer basket and wait a few minutes before removing it from the pan.
Alternatively, you can add chopped rosemary, sesame seeds, or small tomatoes without their water.
