These soft and tasty savory pancakes have a simple and versatile recipe and are the perfect solution for breakfast, brunch, lunch, or a savory snack! Light and fluffy, you can fill them with whatever you like: ham and cheese, grilled vegetables, hummus, eggs, salmon… letting your imagination run wild.

The basic recipe is simple, with few ingredients — flour, eggs, a bit of baking powder, Greek yogurt, and with a few steps, you will get fluffy and golden pancakes.

And here’s the beauty: No fancy equipment needed. Just a non-stick pan and a bit of patience to flip them at the right time. In a few minutes, you can have a dish that will win over everyone — adults and children — thanks to the contrast between the slightly golden outside and the soft inside.

Ingredients

  • 2 cups all-purpose flour
  • 1 oz grated parmesan cheese
  • 180 Greek yogurt
  • 1/2 cup milk
  • 2 tbsp sunflower oil
  • 2 eggs
  • 1 tbsp instant yeast for savory preparations
  • 1/2 tsp baking soda
  • 1 tsp fine salt
  • to taste ground black pepper (a sprinkle to taste)

Steps

  • 1 – In a large bowl, start by adding the liquid ingredients: beaten eggs, yogurt, milk, oil, salt, pepper, and also the grated parmesan cheese to melt it better. Mix the mixture well.

    Add the sifted flour, yeast, and baking soda. Mix coarsely, incorporating all the flour well, then let the mixture rest for 15 minutes.

  • 2 – Preheat a non-stick pan over low heat, or a pancake pan like the one in the picture I use (very convenient for making pancakes and many other things click here to buy it).

    Brush the pan with a thin layer of olive oil and take a heaping tablespoon of batter for each pancake. Place the batter in the pan and do not touch it again until it forms bubbles on the surface; at that point, it is ready to be flipped and cooked on the other side. It will take about 3-4 minutes in total for each pancake.

  • 3 – The pancakes are ready, you can serve them as you like, plain or stuffed. If you want to get creative, you can add to the batter, before cooking, chives, chopped fresh basil, chopped sun-dried tomatoes, chopped green olives… with imagination, you can achieve many variations.
