Pumpkin and feta lasagna with air fryer is another of the thousand things you can make with this wonderful appliance, but if you don’t have it, you can also use the traditional oven following the same procedure. Try also the vegetable lasagna version for vegetarians or vegans, and you’ll be licking your lips.
For this recipe, I also used my Casori 5.5 qt air fryer with a semi-rectangular basket and a 8×6 inch disposable aluminum pan, very convenient for cooking and storing in the freezer when needed.

Ingredients
- 9 oz pumpkin (already cleaned and diced)
- 5 oz feta (in a single slice)
- 1/2 small glass water
- 2 cups béchamel sauce (already prepared)
- 5 thin sheets of fresh egg pasta (also already prepared)
- to taste nutmeg, rosemary
- to taste olive oil, salt, and pepper
- grated parmesan (as needed, to taste)
Steps
In a 8×8 or 8×6 inch aluminum pan, place the whole slice of feta in the center and around it, in a single layer, the pumpkin cut into small cubes.
Sprinkle with rosemary, salt, pepper, nutmeg, and a drizzle of olive oil. Add half a small glass of water and insert the pan into the air fryer basket.
Cook at 338°F for about 30-40 minutes, until the pumpkin is cooked and tender.
Once the pumpkin and feta are cooked, mash everything with a fork, reducing the mixture to a smooth puree.
Add the béchamel sauce, mixing the ingredients well. Taste and if necessary, adjust the flavor with a pinch of salt.
Take a baking dish and spread a spoonful of pumpkin and feta filling at the base and a drizzle of olive oil, then place the first layer of thin egg pasta sheet on top.
Put two-three tablespoons of filling, spreading it over the entire surface and drizzle with olive oil.
Continue this way for all the other layers of the lasagna, until you have 5 or 4, depending on the height of the dish.
Finish assembling the lasagna with a layer of pumpkin and feta filling, a drizzle of olive oil, and plenty of grated parmesan.
Preheat the air fryer to 356°F for 4 minutes.
Insert the pan into the basket and cook at 356°F for 15 minutes.
Once cooked, let the lasagna rest in the turned-off air fryer for 5 minutes before serving.
