Corn cookies with orange juice, gluten-free and lactose-free, perfect for those who are intolerant and want to make cookies without wheat flour and milk. They are very easy to make, the dough is compact and malleable to form the cookies, they can be baked in both traditional ovens and air fryers.
Enjoy them simply as per the recipe or have fun adding pieces of dried fruit such as blueberries, mango, or pineapple to the dough. Try also the cookies with oat muesli, they are also delicious, gluten-free, and lactose-free.

Ingredients
- 250 precooked white corn flour (PAM)
- 2 tbsp cornstarch (Maizena)
- 1/2 cup orange juice
- 1/3 cup sunflower oil
- 1/3 cup sugar
- 1 egg
- a pinch of fine salt
- 1 tsp baking powder
- as needed grated orange zest and sugar for garnish
Steps
In a bowl, mix all the ingredients well and form a compact mass. Cover the bowl and let the dough rest for at least 30 minutes.
After the resting time, knead the dough again with your hands to form a smooth and homogeneous mixture.
For each cookie, take a teaspoon of dough and form equally sized balls.
Using a fork, press the balls once, then press them a second time crossing the fork’s indentation pattern.
Sprinkle the cookies with granulated sugar and place them on a baking tray lined with parchment paper. Or in the air fryer basket.
Bake the cookies in the oven at 340°F for 15 minutes. Or in the air fryer at the same temperature, making sure to turn them after 10 minutes and continue cooking.
Remove from the oven and let them cool before consuming.
