BAKED PORRIDGE with fruit using an air fryer

Today we will make baked porridge with fruit, a simple yet delicious recipe: the perfect treat to start the day. Perfect for a complete breakfast or a light yet nutrient-rich brunch, this dish combines the creaminess of oats with the natural sweetness of fruit, in a baked version that gives a soft consistency inside and slightly golden on the surface.

The magic of baked porridge lies in its versatility: it can be prepared in advance, customized with the seasonal fruits we like best, enriched with spices like cinnamon and vanilla, or embellished with nuts and seeds. It is a great alternative to classic porridge on the stove, especially for those who love ‘comfort’ dishes but don’t want to give up balanced nutrition.

Moreover, the real surprise is that the version I prepared is cooked in an air fryer. In just a few minutes and with zero stress, you will get porridge gratiné on the surface but creamy inside, without turning on the oven and with the advantage of faster and more efficient cooking.

Ingredients

  • 2/3 cup oat flour (regular, instant, or made from flakes)
  • 2 1/2 tbsp potato starch (or corn starch)
  • 1/2 cup milk (dairy or plant-based)
  • 1/2 cup yogurt (dairy or soy)
  • 2 tbsp oat flakes
  • 4 tbsp agave syrup (maple or rice syrup, or honey or sweetener as desired)
  • 2 tsp coconut oil (or flaxseed, olive, or sunflower oil)
  • 1 tbsp almond flour (or almond, walnut, or hazelnut granules)
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 1/2 tsp cinnamon powder (or vanilla)
  • 1 fruit of choice (peach, apple, strawberries, blueberries, banana)

Steps

  • In a bowl, place all the ingredients, and as you can see, you can substitute with various alternatives. Finally, add the grated fruit. Mix the ingredients well. The combinations are endless; the one shown in the photo is with peach and walnuts.

  • This is another alternative version with strawberries and almonds.

  • Pour the mixture into a small ovenproof dish, previously oiled.

    I usually use a ceramic container with a diameter of 5 inches and some glass jars with a diameter of 3 inches. With this amount, I can make 4 jars.

  • Cook the porridge in the air fryer at 340°F for 20 minutes.

    If necessary, depending on the type of air fryer you have, you can increase the cooking time by 5 minutes.

    Take it out of the oven and let it cool or warm before consuming. It keeps in the refrigerator for a few days, so it can be prepared in advance.
