GLUTEN-FREE BREAD with Pea Flour, Buckwheat, Pumpkin and Poppy Seeds

Today I present to you a special and healthy recipe: gluten-free bread made with pea flour and buckwheat. This combination is perfect for those seeking a tasty and nutritious alternative, without giving up the pleasure of good homemade bread. Pea flour adds protein and a delicate flavor, while buckwheat gives a rustic touch and an inviting color.

To make it even more flavorful and crunchy, I added pumpkin seeds and poppy seeds, which enrich the bread with flavor and nutrients. You can bake the bread in a traditional oven or with an air fryer. The loaf weighs 500 grams.

Ingredients

  • 3/4 cup pea flour
  • 3/5 cup buckwheat flour
  • 3/5 cup gluten-free flour mix (or rice flour)
  • 1 1/6 cup water (warm)
  • 1 3/4 tsp active dry yeast
  • 4/10 oz psyllium husk powder
  • 1/2 tsp sugar
  • 1 tsp fine salt
  • 1 tbsp pumpkin seeds
  • 1 tbsp poppy seeds
  • 1 2/5 tbsp olive oil

Steps

  • Put the warm water with the sugar and dry yeast in a bowl. Stir and let dissolve for about 5 minutes.

    Then add the pea flour, buckwheat flour, and gluten-free flour mix or plain rice flour. Add the psyllium husk powder, salt, and sunflower and poppy seeds. Mix the dough well in the bowl with a fork; I do not recommend doing it by hand because it’s very soft.

    Let it rest for 5 minutes and finally add the olive oil, incorporating it gently into the dough with your hands, forming a loaf. Cover the bowl and let rise for 1 hour.

  • After the rising time, turn the dough directly onto the work surface without handling it, shape the loaf into a rectangle, and place it in an oiled rectangular aluminum mold that fits your air fryer. I use those that are 8 inches x 4.7 inches.
    With this quantity, you can make 1 loaf of bread about 17.6 oz.
    Finally, before baking, brush the surface of the loaf with a light layer of olive oil.

  • Preheat the air fryer to 392°F for 5 minutes.
    Bake the bread and cook at 392°F for 20 minutes. Then turn the bread over and continue cooking for another 10 minutes still at 392°F.
    In total, it will take 30 minutes to bake a delicious bread, crispy on the outside and soft on the inside, but above all, very tasty.
