PUMPKIN, LEEK, AND POTATO CREAM

The pumpkin, leek, and potato cream is an easy-to-make and comforting autumn dish, perfect to enjoy as the first chills arrive. The combination of these 3 ingredients, which nature offers us, is rich and tasty, a perfect first course or side dish.

The pumpkin, leek, and potato cream will be perfect if you add some toasted and flavored croutons and finally, my little secret, a grating of fresh ginger before serving it. You will make everyone in the family happy, including vegans and vegetarians.

Ingredients

  • 1 lb yellow pumpkin (already cleaned)
  • 1 large leek (or 2 small ones)
  • 2 potatoes
  • 3.5 tbsp olive oil
  • 3.4 cups vegetable broth
  • 1 tsp fine salt
  • 1 stem fresh ginger
  • 4 slices bread
  • to taste garlic powder, parsley, rosemary

Steps

  • 1 – Clean and slice the leek into thin slices, then sauté it with olive oil for 3 minutes in a tall saucepan or an earthenware pot. In the Bimby, add oil and sliced leeks and sauté for 3 minutes at 212°F, speed 1.

    2 – Peel and dice the potatoes, peel and dice the pumpkin. Add them to the leek sauté and cook the vegetables for 3 minutes. In the Bimby, add the vegetables and sauté everything for 3 minutes at 212°F, speed 1.

    3- At this point, add the vegetable broth, 1 teaspoon of fine salt, and cook in the pot for 30 minutes over medium-low heat. In the Bimby, cook for 30 minutes at 212°F, speed 1.

    4- At the end of cooking, turn off the heat, blend everything finely, even with an immersion blender until you obtain a smooth and velvety cream. In the Bimby, blend for about 30 seconds at speed 8.

    5- Cut the slices of bread into small cubes and put them in a small bowl. Drizzle them with olive oil, sprinkle a bit of garlic powder, chopped parsley or rosemary, according to your taste, ground black pepper, and fine salt, and toast them in a pan or air fryer (8 minutes at 320°F).

    6- Plate the pumpkin, potato, and leek cream and serve it hot with a handful of flavored and toasted croutons in the center and a generous grating of fresh ginger. All health!!
