GORGONZOLA AND PEAR MUFFINS with Air Fryer

Gorgonzola and pear muffins with air fryer are my favorites, soft, tasty, and very easy to make. They are perfect as an appetizer or for a rustic snack. Surprise your guests with this recipe and they will all be pleasantly surprised.

I didn’t use walnuts, but if you want you can put half a walnut on top of the muffin before baking, I added a pinch of turmeric to the batter and a sprinkle of poppy seeds before baking them. The gorgonzola is sweet, but you can also use the spicy one, Coscia or Abate pears are perfect and with large baking cups with a diameter of 2 inches you will get perfect single portions.

Ingredients

  • 1 2/3 cups flour
  • 1/3 cup milk
  • 1/3 cup olive oil
  • 4 1/4 oz gorgonzola (sweet or spicy)
  • 1 oz grated Parmesan cheese
  • 7 oz pears (Coscia or Abate already peeled and cleaned)
  • 2 eggs
  • 1 1/2 tsp instant yeast for savory preparations
  • 3/4 tsp fine salt
  • 1 pinch ground turmeric
  • to taste ground black pepper (+ poppy seeds (optional))

Steps

  • In a bowl, beat the eggs with the oil, the milk, and a pinch of ground turmeric.

    Then add the grated Parmesan cheese and crumbled gorgonzola in pieces and mix it into the liquid mixture.

  • Add the flour, instant yeast for savory preparations, salt, and ground pepper.

    Knead the mixture well until you get a smooth cream.

    After peeling and cleaning the pears, cut them into small chunks and add them to the batter, mixing them well.

  • Place paper baking cups in the air fryer basket, without greasing them with oil or release spray.

    Pour 2 tablespoons of batter into each baking cup. Sprinkle with a pinch of black poppy seeds and, if you like, place half a walnut on top.

  • Preheat the air fryer to 320°F for 3 minutes, insert the basket and cook at 320°F for 15 minutes.

    Remove them from the fryer and let them cool before serving.
