The lemon and banana cake with air fryer is the dessert I most enjoy preparing with my fryer because it is fresh, fruity, and enjoyable at any time of the day.
The quantities in this recipe are suitable for all air fryers, with round or square baskets, and the pan I used is 8 inches in diameter with high sides, one of the accessories of this wonderful appliance. For optimal and perfect cooking, stick to the quantities and don’t double them.

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/3 cup milk (also plant-based)
- 1/3 cup sunflower oil
- 1/4 cup lemon juice (+ grated lemon zest)
- 2 bananas (medium)
- 1 1/2 tsp baking powder (vanilla-flavored)
- 1 egg
- Half pinch fine salt
- to taste powdered sugar
Steps
1 – In a bowl, put the flour, sugar, half a pinch of salt, milk, egg, sunflower oil, grated lemon zest, and vanilla-flavored baking powder. Mix the ingredients well until it becomes a smooth and homogeneous batter and set it aside for a few minutes.
2 – Meanwhile, in another bowl, cut the bananas into chunks and pour the lemon juice over them, then let them marinate for 5 minutes. This will prevent them from turning black during cooking.
3 – At this point, add the bananas with the lemon juice to the batter and mix them well.
4 – Prepare the baking pan by spraying the release agent inside, or butter and flour it. Pour the mixture in and level it evenly, as usual.
5 – Preheat the air fryer to 320°F for 3 minutes.
6 – Finally, place the pan in the air fryer and bake the cake at 320°F for 30-35 minutes.
7 – With the air fryer, do the toothpick test in the center of the cake to check the cooking, but above all, you must check that the bottom is cooked.
8 – Let the cake cool and after removing it from the pan, dust it with powdered sugar.
