Today I would like to propose a grape sorbet, delicious and very easy, as well as quick to make. It can be prepared with different types of grapes, whether white or red, and does not contain egg whites, gluten, or lactose. The grape sorbet is a recipe that does not require cooking or owning a gelato maker; it is versatile, meaning it can be served as a dessert at the end of a meal or as an intermezzo between a meat and fish dish.

Ingredients

  • 14 oz white or red grapes
  • 1 cup water
  • 3.5 oz sugar
  • 1 g fine salt
  • Half lemon juice
  • as needed grape berries for decoration

Steps

Detach the grape berries from the bunch, place them in a bowl and rinse under running water.

Drain them completely and transfer them to a blender jar, along with ½ cup of water, the salt, and the juice of half a lemon (it will enhance the grape flavor and help maintain the color).

Blend just enough to reduce the berries to a liquid puree.

Strain the mixture through a sieve, pressing the puree with the back of a spoon to extract as much juice as possible.

Transfer the obtained juice into a glass or steel container, add the sugar and stir to dissolve it.

Cover the container and place it in the freezer.

Take the sorbet out after 3 hours, break the ice crystals with a fork, stirring it several times.

Repeat this operation after another 3 hours, then let the sorbet mature and develop flavors for at least another 6 hours or, even better, 12 hours. The longer it rests, the more delicious it becomes.

To serve the grape sorbet: take it out about ten minutes before serving. If possible, quickly blend the sorbet to make it more frothy and creamy, but without melting it, or use a fork to make it soft and frothy.

Serve in individual glasses or cups and decorate with the smaller grape berries, which generally do not contain seeds and therefore do not need to be deseeded, by cutting them in half.
