How many cakes have we made besides the apple tenerina cake? You surely remember the American one, the apple pie and the apple strudel from Trentino, or the lactose-free apple bread , but you’ve never made this delightful cake.
It’s very easy to make, you just need a few apples at hand, a few tablespoons of flour, sugar, any type of milk, even plant-based, sunflower oil, and the apple tenerina cake will be ready in no time. Exactly, there are no eggs, and we don’t even need them. The batter is minimal because to make this cake we just need to wrap the apples with a thin layer of batter. But now, get a rectangular baking pan about 9.5 x 11 inches and let’s see together how to prepare it.

Ingredients
- 6 apples (large, any type will do)
- 1 lemon
- 1 cup flour
- 7/16 cup sugar
- 7/16 cup milk (even plant-based)
- 3 tbsp oil (sunflower or corn)
- 1/2 packet baking powder (8 grams)
- 1 tsp vanilla extract (liquid)
- a pinch of cinnamon (optional)
- to taste powdered sugar
Steps
Peel the apples and cut them into chunks not too small, 2-3 cm (about 1 inch) is fine. Place them in a large bowl, squeeze the lemon juice over them to prevent browning, and move on to the next step.
Take another bowl, pour in the milk, oil, flour, sugar, vanilla extract, a pinch of cinnamon, and baking powder, the vanilla type is perfect. Mix the batter well, it should be semi-liquid. If necessary, add 1 or 2 tablespoons of milk to soften it.
Now, you can pour the batter into the apple bowl and mix it well with the fruit chunks. Spray a release agent on the baking pan, it works great for me, or oil and flour it. Pour the apple mixture into the pan and distribute it evenly.
Bake the apple tenerina cake in a preheated ventilated oven, for about 45 minutes at 356°F.
At the end of baking, let it cool and before serving, sprinkle with powdered sugar.
