POTATO CROQUETTES

I usually serve potato croquettes alongside Roman-style cheesy rice balls, because when we fry at my house, we fry everything. If we add a slice of margherita pizza, it becomes the perfect Saturday night dinner with family and friends.

Potato croquettes are simple to make, seasoned with grated cheese and chopped parsley, then dipped in a delicate batter of water and flour and dropped into hot oil. I can tell you that even in an air fryer or oven, they turn out great and are lighter than frying.

Moreover, as an alternative, my mother-in-law used to make potato croquettes with chopped mint in place of parsley and didn’t add anything instead of the batter or egg white to coat them with breadcrumbs. Try them too because even like this, they are delicious.

Ingredients

  • 1.2 lbs yellow potatoes
  • 3.5 oz grated cheese (half Parmesan and half Pecorino)
  • 3.5 oz breadcrumbs (1.75 oz for the mixture + 1.75 oz for coating)
  • 2 eggs
  • 0.35 oz chopped parsley
  • to taste salt and ground pepper
  • 2 1/8 cups vegetable oil (for frying)
  • 0.42 cup water
  • to taste flour
  • salt

Steps

  • Boil the potatoes with their skins on, in water. When cooked, let them cool, peel them and mash them with a potato masher.

    Place the mashed potatoes in a bowl with the beaten eggs, grated cheese, finely chopped parsley, 1.75 oz of breadcrumbs, ground black pepper, and salt to taste.

  • Mix the mixture well, taste it, and adjust the salt as needed.

    Let the mixture rest in the refrigerator for at least an hour before shaping the croquettes.

  • Prepare the batter for coating by placing cold water in a bowl with a pinch of salt, let it dissolve, and then gradually add the flour. You should obtain a smooth, semi-liquid cream. Alternatively, you can replace the batter with egg white.

    Prepare another bowl with breadcrumbs for coating.

  • With a tablespoon, take a portion of the mixture and shape it into a potato croquette.

    Dip it in the batter and then in breadcrumbs, then place the breaded croquettes on a tray.

    Let them rest for 10 minutes before frying them in hot oil until golden brown.

    Alternatively, you can cook the croquettes in an air fryer at 400°F for 15-20 minutes or in the oven at the same temperature for the same cooking time.
