WHOLE WHEAT ROLLS

Whole wheat rolls are easy to make, just like the olive oil rolled rolls, same shape, only the flours and cooking method change. They are soft and tasty, which is why everyone loves them, even children, and they are great to serve at the table or as a snack with ham and cheese.

The baking of whole wheat rolls can be done in a traditional oven, or, as I will show you in this recipe, in an air fryer, which I adore for its wonderful speed in cooking everything. If you don’t own one, I recommend treating yourself to one or having someone gift it to you, because it’s really worth it and we could make other delicious recipes together with light and healthy cooking.

Ingredients

  • 2 3/4 cups whole wheat flour
  • 1 1/4 cups all-purpose flour
  • 1 1/3 cups water (+ 3 1/2 tbsp to dissolve the salt)
  • 1 1/3 tbsp olive oil (4 tablespoons)
  • 1/2 oz fine salt
  • 2 tsp honey
  • 1/4 oz instant yeast (or 3/4 oz of fresh yeast)

Steps

  • Pour 1 1/3 cups of lukewarm water into a container and dissolve the honey and instant yeast in it, letting it rehydrate for 15 minutes.

    In the meantime, put 3 1/2 tbsp of water in a small cup and dissolve the salt in it. Prepare the dose of olive oil in another small cup.

    Sift the two types of flour and put them in a bowl. If you have a stand mixer for kneading, even better.

  • Knead the flour with the water and yeast, after a few minutes add the water with the salt and continue kneading. Finally, add the oil and let the dough incorporate until it’s smooth and compact. Cover the dough and let it rise in a warm place until doubled.

    At this point, take the mass and turn it onto a floured work surface, divide it into equal parts weighing about 2 3/4 oz each, resulting in about 12/13 portions.

    Roll out the dough ball with a rolling pin and then roll it up on itself.

  • Place the shaped rolls on a baking tray lined with parchment paper.

    If you will bake them in the air fryer, I recommend cutting the parchment paper for each whole wheat roll (as in the photo) to lift them better for placing in the fryer basket.

    Let the rolls rest for at least 1 hour, covered with a cotton cloth.

  • After the second rise time, proceed to bake the whole wheat rolls.

    In the traditional oven, preheated to 320°F for 35 minutes, until thoroughly cooked.

    In the air fryer, preheat at 320°F for 2 minutes, then place 3 rolls at a time in the basket and bake them at 320°F for 25 minutes. After 10 minutes, remove the parchment paper to facilitate cooking.
