Ingredients

  • 8 oz all-purpose flour
  • 1/2 cup water (hot)
  • 1 egg
  • 1/2 teaspoon fine salt
  • 1.1 lbs minced meat
  • 7 oz white onions
  • 1/2 cup water
  • Half teaspoon fine salt
  • black pepper (ground)
  • butter + vegetable oil
  • broth

Steps

  • Start preparing the dough for the pastry, putting hot water with salt and egg in a bowl. Incorporate the sifted flour and knead the mixture, which will be soft and elastic.

    Form a dough ball and let it rest for half an hour, covered in the floured bowl.

  • Prepare the filling by putting the minced meat in a bowl, add finely chopped onions, salt, a sprinkle of ground black pepper, and water.

    Mix the meat mixture well and set it aside.

  • After the thirty minutes of rest, take the dough and roll it out on the floured work surface. Form a thin pastry rectangle a few millimeters thick, about 18 inches wide and 14 inches.

    Spread the meat mixture evenly on top, leaving a small edge of about 3/4 inch on one side.

  • Starting from the widest side, roll the filled pastry onto itself.

    Roll up to the edge you left empty and overlap it well, forming a long and compact roll.

  • With a spatula, cut neatly into pieces of the roll about 1.5-2 inches each, making about 12-14 pieces.

  • Turn them and place them on the floured work surface as you cut.

  • In a high-edged pan, put a knob of butter and vegetable oil, optionally, you can add some vegetables for the sauté, or 1 tablespoon of ready-made sauté in a jar.

    When the butter is melted, gently place the pasta rolls with meat inside and fry them over medium-low heat.

  • Fry for about 4 minutes on one side, then turn them and fry the other side until they are lightly golden.

  • At this point, pour hot meat broth into the pan, which can be chicken, beef, or vegetable.

    You will need about half a liter, and you should cover the pasta rolls with broth up to the edge.

  • Add a pinch of bay leaf to the broth, put the lid on the pan and cook for 20 minutes over medium-low heat.

  • Once cooked, the broth will have been absorbed and you can serve the pasta and meat rolls with a sprinkle of fresh chopped dill or sour cream.
