WHITE PIZZA on a Tray

White pizza on a tray isn’t as simple as it seems, but with this recipe and the method I use to make it, you’ll make it easily. Unlike Margherita pizza, which I make thin and crispy, the white pizza will be soft and airy, great also for being topped cold.

The kneading phase is where the gluten mesh develops, creating a network, and in this recipe I’ll show you step by step, a simple method to knead the dough by hand without much effort and without using a mixer. Nothing to take away from the legendary Margherita pizza on a tray, one with thin and crispy dough, worth trying.

Ingredients

  • 12.35 oz all-purpose flour
  • 5.29 oz bread flour
  • 1.5 cups water
  • 0.49 oz salt
  • 0.46 oz fresh yeast
  • 0.35 oz olive oil
  • 0.21 oz sugar

Steps

  • In a large bowl, add the room temperature water (50°F), crumble in the fresh yeast, add the oil and sugar. Let the yeast dissolve and activate for 5 minutes.

    Let the dough rest for 10 minutes three times, and it will be kneaded effortlessly at the end.

    Add the sifted flour and roughly mix with a fork, it will be a very soft and lumpy dough, let it rest covered for 10 minutes.

  • After 10 minutes, still in the bowl, with oiled hands, lightly knead the dough bringing the outer edges inward. You’ll notice it’s starting to become smooth.

    Stop and let the dough rest for another 10 minutes covered.

  • Still with oiled hands, knead the dough taking the outer edges bringing them inward, and you will notice at this point that the gluten mesh has formed.

    The dough will be smooth and compact, let it rest covered for another 10 minutes.

  • Take a baking tray, oil it and turn the pizza dough over into it.

    Spread it as much as possible to the edges, cover it and let it rise in the turned-off oven for 1.5 hours.

  • After 1.5 hours, you’ll find a puffy dough with bubbles, risen with great force.

    Gently deflate it with your fingers, pour some olive oil over it, and a sprinkle of fine salt.

  • Preheat the oven to 392°F and bake the white pizza for 15 minutes.

    When it’s slightly golden and cooked at the base, take it out and let it cool.

    To maintain good moisture and softness, when it’s still warm, you can brush it with a thin layer of water.
