- 1 roll shortcrust pastry (round, or ready-made puff pastry)
- 2 cups ricotta
- 7 oz sweet provolone (or fontina)
- 7 oz mozzarella
- 3 eggs

Steps
1 – For this rustic pie, you will need a round baking pan with a diameter of 9.5 inches or 10.2 inches.
Line it with the shortcrust pastry or puff pastry, leaving the edges open.2 – In a bowl, place the ricotta with the whole eggs, salt, and ground black pepper. Mix the mixture well.
3 – Add the provolone and mozzarella cut into small cubes and mix everything.4 – Pour the cheese mixture into the pan and level it well, then fold the edges of the pastry over the filling.
