Ingredients
- 8 artichokes (whole)
- 2 sausages
- 1.1 oz grated parmesan
- 1 egg yolk
- 1 sprig chopped parsley
- lemon (the juice of 1 lemon)
- 1/2 cup white wine
- to taste salt and ground pepper
- to taste breadcrumbs and olive oil
Steps
To clean the artichokes, start by removing the tougher outer leaves until you reach the heart, the tender central part. Cut the spiny tips about two-thirds of the way down and clean the stem and all fibrous parts.
Cut the artichoke in half and use a teaspoon to scoop out the central part to remove the choke. Immerse the artichokes and stems in a bowl with water and lemon juice to prevent them from darkening.
In a small pot, bring water to a boil and salt it, then immerse the artichokes and blanch them for 5 minutes, drain, and set aside.
In a bowl, mix the crumbled sausage, egg yolk, grated parmesan, chopped parsley, and salt and ground pepper.
Stuff the blanched artichoke halves with a spoonful of the filling and place them in a lightly oiled baking dish. Also, place the stems in the dish, positioning them between the artichokes.
Sprinkle some breadcrumbs over the artichoke filling and drizzle with olive oil. Pour the half cup of white wine into the bottom of the dish and splash a little over the artichokes.
Bake the artichokes in a preheated oven at 356 degrees Fahrenheit for 15-20 minutes, until they are golden and slightly gratinated on the surface.
