POTATO CROQUETTES with gooey filling

These are more than just potato croquettes with gooey filling, they are little bombs in every sense. You can do many things with potatoes, and this dish is a version that my family loves, we adore them stuffed with a mix of mortadella and melting mozzarella.
Moreover, these potato croquettes with gooey filling are simple and quick to make, delicious and tasty, everyone will enjoy them, both young and old. Ingredients

  • 14 oz potatoes
  • 4 tablespoons flour
  • 3 tablespoons grated cheese (Parmesan or Grana Padano)
  • 1 egg
  • 1/2 teaspoon fine salt
  • to taste chopped parsley + ground black pepper
  • to taste breadcrumbs (for coating)
  • peanut oil (for frying)
  • 1.8 oz mortadella (can be replaced with cooked ham)
  • 1.8 oz mozzarella (for pizza, like pizzottella)

Preparation

  • Boil the potatoes in water with their skins on. Once cooked, peel and mash them. Place them in a bowl and add chopped parsley, salt, egg, Parmesan, ground black pepper, and flour. Mix the ingredients well and let the mixture rest for 15 minutes.

  • Meanwhile, prepare the filling by chopping the mortadella and pizza mozzarella, opting for the pizzottella type as it stays drier.

  • Take a generous tablespoon of the mixture and flatten it between your hands. Place a teaspoon of filling in the center and fold the croquette over itself to form a sphere the size of a tangerine. You can choose the size, even smaller.

  • Now roll the potato croquettes in breadcrumbs and then fry them in plenty of oil.

  • Drain them from the oil when they are golden and place them on a sheet of absorbent paper to remove excess oil.
