The pumpkin sticks are tasty little sticks with a crispy and spicy coating. Easy to make, these pumpkin sticks are ideal for serving at the table as an appetizer or side dish. What distinguishes these sticks is the coating: once dipped in the beaten egg, they are passed through breadcrumbs combined with curry, rosemary, and oregano. I cooked these pumpkin sticks in the air fryer, but if you don’t own one, no problem: in the procedure, I’ll tell you how to cook them alternatively.

Ingredients
- 7 oz pumpkin
- 2 eggs
- 3.5 oz breadcrumbs
- 2 tsps curry
- to taste dried oregano
- to taste dried rosemary
- to taste extra virgin olive oil
- to taste salt

- Air Fryer Paper
Preparation
To make the pumpkin sticks, wash the pumpkin, remove the skin and clean it by removing seeds and fibers. Cut the pulp into sticks.
In a bowl, beat the eggs with two pinches of salt. Prepare a plate where you pour the breadcrumbs and add the curry, oregano, and rosemary, mix well.
Dip the pumpkin sticks in the beaten eggs and then roll them in the breadcrumbs. If desired, you can repeat the operation twice to obtain a more consistent coating.
Place the pumpkin sticks inside the air fryer basket lined with parchment paper (better the specific parchment paper for the air fryer).
Drizzle a little extra virgin olive oil and cook in the hot air fryer at 392°F for 10 minutes, or until golden.
For those who do not have a hot air fryer. Fry the pumpkin sticks in hot oil until golden, or bake them in the oven at 392°F for 15/20 minutes, until golden.
Note: if you’ve made too many pumpkin sticks and don’t want to cook them all, you can freeze them! Place the sticks on a tray lined with parchment paper and put them in the freezer. Once the pumpkin sticks are frozen, transfer them to a freezer bag. Your pumpkin sticks will keep in the freezer and will be available when you want them!
