Homemade almond cookies are simple and genuine traditional cookies from the Abruzzo region, made without butter. In some areas of Abruzzo, they are called biscotti tagliati because after an initial baking, they are cut with a knife and put back in the oven. These cookies can also be made without almonds or enriched with other nuts, according to personal taste.

Ingredients
- 4 cups all-purpose flour
- 3 eggs
- 2/3 cup sugar
- 2/3 cup sunflower seed oil
- 1 packet baking powder
- lemon zest
- 5 oz almonds
Preparation
To make the Homemade Cookies, place the flour with the baking powder on a board. Break the eggs and start working the dough with a fork.
Then add the sugar and grated lemon zest, and continue working the dough.
Incorporate the sunflower seed oil, kneading first with the fork and then with your hands. Finally, incorporate the coarsely chopped almonds into the dough. Knead until a soft and homogeneous dough is obtained.
Divide the dough into four parts, forming four loaves about half an inch high and place them on a baking sheet lined with parchment paper.
Bake the cookies in a preheated oven at 355°F for about 30 minutes.
When they start to become golden, remove them from the oven and cut them into diagonal slices. Return the cookies to the oven at 250°F for 10 minutes to make them crisp, until golden brown.
Then remove from the oven and let them cool. Enjoy!
