Ingredients
- 1/2 cup Couscous
- 1/2 cup Water
- 1.8 oz Pre-cooked Chickpeas
- 1 Fennel
- 3.5 oz Cabbage
- 1 tablespoon Tomato Sauce
- 2 teaspoons Curry
- 1 teaspoon Ground Ginger
- 1 Carrot
- to taste Onion
- to taste Extra Virgin Olive Oil
- to taste Salt
Preparation
To prepare the spiced couscous, wash and clean the vegetables (carrot, cabbage, and fennel), then julienne them. In a pot, pour a drizzle of extra virgin olive oil, the chopped onion, and the spices. Add the vegetables and place over low heat.
Cook for 10 minutes; the vegetables should be cooked but still crunchy.
Then add the tomato sauce and chickpeas, continue to cook on low heat until the sauce thickens.
In a pot (or bowl), pour the couscous and wet it with boiling water. Cover with a lid and let it rest for 5 minutes. Then, fluff the couscous with a fork.
Then pour the couscous into the pot with the sauce, stir to combine the ingredients.
Serve, and optionally add grated Parmesan cheese to your liking. Enjoy your meal!
