Cocoa and coconut cookies are healthy and tasty treats made without gluten and without butter.
If you are looking for breakfast or snack cookies, these cocoa and coconut cookies are easy and quick to make; once tried, you won’t be able to do without them!

Ingredients
- 1/4 cup Brown sugar
- 3 1/2 tbsp Sunflower oil
- 2 Eggs
- 2 tbsp Grated coconut
- 3 tbsp Unsweetened cocoa powder
- 1 cup Rice flour
- Half packet Baking powder
- to taste Chocolate chips
Preparation
In a bowl, mix the brown sugar with the sunflower oil; then, continue mixing while adding the eggs.
Next, incorporate the coconut and cocoa. Finally, gradually add the baking powder and flour. You should get a homogeneous and soft mixture.
Scoop a bit of dough with a spoon, place it on a baking tray lined with parchment paper, trying to make balls and spacing them apart.
Place some chocolate chips on the surface of each ball.
Bake in a preheated oven at 350°F for 20 minutes. Once the cookies are baked, remove them from the oven and let them cool.
Store them in a cookie jar. Enjoy!
