For an alternative to classic vegetable side dishes, today I suggest a tasty and easy-to-make recipe. The curried honey carrots and potatoes are a delicious spicy side dish that I cooked in the hot air fryer. I enriched these curried honey carrots and potatoes by adding some thyme and a clove of garlic; you can also bake them in the oven if you don’t have an air fryer.

Ingredients
- 4 Carrots
- 2 Large Potatoes
- 1 teaspoon Honey
- 2 teaspoons Curry
- 1 sprig Thyme
- to taste Extra virgin olive oil
- to taste Salt
- 1 clove Garlic

- Air Fryer
- Air Fryer Paper
Preparation
To make the curried honey carrots and potatoes, peel and wash the carrots; slice them into rounds approximately 1/4 inch thick.
Place the carrots in a bowl, add a drizzle of extra virgin olive oil, the honey, curry, and thyme. Mix with a spoon to combine the ingredients.
Place the carrots in the air fryer basket lined with parchment paper. Cook in the air fryer, preferably preheated, at 356°F for 10 minutes.
Meanwhile, peel and wash the potatoes; then slice them thinly (like chips) and place them in the bowl where the carrots were seasoned, stir with a spoon.
Add the potatoes with the carrots, also add the clove of garlic and continue cooking in the air fryer for another 10 minutes, or until golden brown.
Salt to taste at the end of cooking and serve. Enjoy your meal!
For those who do not have a hot air fryer, you can bake in a preheated oven at 392°F for 30 minutes, or until desired doneness.
