Coconut Shrimp

The coconut shrimp is a delicious main course cooked in the hot air fryer. With a crispy and spiced coating, the coconut shrimp is easy to make; they can also be served for an appetizer with friends, accompanied by a sauce of your choice. One leads to another, and everyone will enjoy them!

Coconut Shrimp

Ingredients

  • 7 oz Shrimp
  • 1 egg (medium)
  • to taste Flour
  • to taste Breadcrumbs
  • 2 tbsp Unsweetened Dessicated Coconut
  • 2 tsp Curry
  • to taste Extra Virgin Olive Oil
  • to taste Salt

Tools

  • Air Fryer
  • Air Fryer Paper Liners

Preparation

  • Wash the shrimp under running water, remove the head, legs, and shell, then remove the intestinal tract: cut the shrimp’s back with a knife and gently pull it out, trying not to break it.

  • Dry the shrimp with paper towels.

  • In a bowl, beat the egg with a pinch of salt. In a plate, pour the flour; in another, pour the breadcrumbs and add the curry and dessicated coconut.

  • Coat the shrimp one by one, first in flour, then in the egg, and finally in the breadcrumb mixture.

  • Place the shrimp in the air fryer basket lined with parchment paper.

  • Drizzle a little extra virgin olive oil and cook at 356°F for 10 minutes or until golden.

  • Serve the shrimp with a sauce of your choice. Enjoy your meal!

  • For those who do not have an air fryer, you can fry them or bake them in a preheated oven at 392°F for 15/20 minutes, or until the desired doneness.
