The rice paper rolls with savoy cabbage and spiced fennel are delightful finger food bites, easy to make. Since I first tried rice papers, making rolls filled with chicory, I’ve continued to use them because I liked them a lot! So I created this recipe by stuffing the rolls with a filling that won me over: I used savoy cabbage, a fennel, a carrot, and spices. A mix of flavor and taste I couldn’t resist and have already planned for a repeat!

Ingredients
- 20 sheets Rice paper
- 3.5 oz Savoy cabbage
- 1 Fennel
- 1 Carrot
- to taste Extra virgin olive oil
- 1 1/2 tsp Coriander
- 1 1/2 tsp Cumin
- 1 1/2 tsp Ground ginger
- 1 1/2 tsp Ground turmeric

Preparation
To make the rice paper rolls with savoy cabbage and spiced fennel, wash and clean the vegetables (carrot, savoy cabbage, and fennel), then julienne them.
In a pot, pour a drizzle of extra virgin olive oil and the spices. Add the vegetables and put on low heat.
Cook for several minutes; the vegetables should be cooked but still crisp. If necessary, salt at the end of cooking.
In a bowl or small plate full of cold water, soak the rice papers for a few seconds, just enough to soften them.
Lay two rice papers on top of each other, fill with a spoonful of vegetables. Close the roll as follows: bring the bottom part of the rice papers inward, then bring the two lateral parts (right and left) towards the center, and then the top part; then roll onto itself.
Drizzle the surface of the rolls with a little extra virgin olive oil and transfer them to the hot air fryer’s bowl. Cook at 356°F (180°C) for 10 minutes until they are crispy.
Alternatively, cook them in a preheated convection oven at 356°F (180°C) for about 15 minutes. Or fry them in hot oil.
