Sandwich with Guacamole, Eggs, and Bacon

The sandwich with guacamole, eggs, and bacon is a rich and hearty sandwich with two layers of filling and three slices of toasted bread. Being a sandwich lover myself, I had fun creating a truly tasty filling! I made the lower layer of the sandwich with slices of crispy bacon and guacamole (made at home, of course). But the real treat of this sandwich is the upper layer, filled with guacamole and a gooey and delicious cheese crepe: during the final cooking phase of the crepe, I added a slice of cheddar and then folded everything into a package, so that with every bite of the sandwich, the gooey cheese oozes out. This sandwich with guacamole, eggs, and bacon is ideal as a quick dinner or picnic snack.

Recipes with Avocado

Ingredients

  • 6 slices sandwich bread
  • 2 slices Bacon
  • 2 cheddar slices
  • 1 Egg
  • 1 tbsp Milk
  • to taste Salt
  • 1 Avocado
  • 1 Lime
  • to taste leek
  • 3 Cherry tomatoes
  • to taste Extra virgin olive oil
  • salt and pepper

Preparation

  • To make the sandwich with guacamole, eggs, and bacon, add the avocado flesh to a blender, add the juice of half a lime and the extra virgin olive oil gradually, blend until you get a puree, and transfer it to a bowl.

  • Wash and clean the cherry tomatoes, dice them and mix them with the guacamole. Also, add the chopped leek (quantity to taste) and, if desired, some chopped chili pepper. Finally, add salt and pepper.

  • In a bowl, beat the egg with the milk and a pinch of salt. Grease a non-stick pan and heat it over low heat. Pour in a few tablespoons of batter, enough to cover the surface of the pan: rotate the pan to distribute the mixture evenly over the surface of the pan.

  • When you start to see a light browning, and the edges begin to come away, use a spatula to flip the crepe. Place a slice of cheddar on it. Cook the other side as well, waiting for it to color, and then fold the edges inward, creating a sort of square package (as in the photo).

  • Fry the bacon slices, without olive oil, until they become crispy. Toast the bread slices on both sides in the toaster; it will only take a few minutes.

  • Proceed to assemble the sandwich: take the first slice of bread and place two slices of crispy bacon and a generous spoonful of guacamole on it. Take another slice of bread and place it on top of the first sandwich layer. Fill this last layer with a cheese crepe and a generous spoonful of guacamole. Take the third slice of bread and close the sandwich.

  • If desired, the toasted bread slices can be seasoned with mayonnaise or sauces of your choice.
    Cut the sandwich in half, serve, and enjoy your meal!
