  • 1 tbsp Parmesan cheese

Preparation

  • To make Potato and Bacon Roses, peel the potato and slice it thinly. The thinner the slices, the better they will bake in the oven.

  • Place the potato slices in a bowl and add a drizzle of extra virgin olive oil. Then add the rosemary, oregano, chives, and grated Parmesan cheese. Use a spoon to mix well, ensuring the herbs stick evenly to the potatoes.

  • On a cutting board or work surface, lay two slices of bacon vertically, overlapping each other. Place the potato slices on them, overlapping one another. Gently roll the bacon to form a rose.

  • Place the roses in a greased cupcake mold or liners and bake in a preheated oven at 392°F for 20 minutes covered with foil, then 20 minutes uncovered until golden brown. Serve warm and enjoy!
