Rainbow Popsicles

These days, the heat is relentless throughout Italy, but rainbow popsicles will bring you some sweet refreshment. Colorful and tasty popsicles made with various types of fruit and layered to resemble the colors of the rainbow. To make them, you’ll need special molds, sticks (or plastic sticks), fruit, sugar, and water. Besides being beautiful to look at, rainbow popsicles are also healthy and nutritious because I didn’t use any dyes. To brighten up these hot days, you can make these popsicles with the little ones, it will be fun!

Rainbow Popsicles

Ingredients

  • 3.2 oz Lemon juice
  • 1/4 cup Water
  • 3.5 tbsp Sugar
  • 4.6 oz Melon pulp
  • 2 tbsp Water
  • 2 tbsp Sugar
  • 5.6 oz Watermelon
  • 1.7 oz Sugar
  • Juice of half a lemon
  • 3 Kiwi
  • 1/4 cup Water
  • 1.8 oz Sugar
  • 2 tbsp Mint syrup
  • 5.3 oz Blackberries
  • 2.8 oz Sugar
  • 1/4 cup Water

Preparation

  • To make rainbow popsicles, pour the lemon juice with water into a small pot, heat for a couple of minutes, then add the sugar. Cook until the sugar is dissolved, once it starts boiling, remove from heat and let it cool.

  • Cut the melon pulp into cubes and put it in the blender, blend until you get a puree. Then transfer everything to a pot, add room temperature water and sugar. Cook until the sugar is dissolved, then cook for another five minutes, stirring occasionally. Remove from heat and let it cool.

  • Cut the watermelon pulp into cubes and pour it into the blender. Blend until you get a puree, then strain the blended pulp through a sieve to remove the seeds, and collect the resulting liquid in a bowl. Then transfer it to a pot, add lemon juice and sugar. Cook until the sugar is dissolved, then cook for another five minutes, stirring occasionally. Remove from heat and let it cool.

  • Blend the kiwi pulp and then strain it through a sieve to remove the seeds, and collect the resulting liquid in a bowl. Then transfer it to a pot, add water and sugar. Cook until the sugar is dissolved, then cook for another five minutes, stirring occasionally. Remove from heat and, once cool, incorporate the mint syrup.

  • Blend the blackberries and then strain them through a fine mesh sieve to remove the seeds, and collect the resulting liquid in a bowl. Then transfer it to a pot, add water and sugar. Cook until the sugar is dissolved, then cook for another five minutes, stirring occasionally. Remove from heat and let it cool.

  • At this point, you can proceed with assembling the popsicles. You can start with the color you want and create combinations based on your creativity.

  • Pour one mixture at a time into the popsicle molds and put them in the freezer to set, once set, you can pour in the next color. Once you’ve made the first three layers, it’s advisable to insert the sticks, or plastic palettes. Store in the freezer and enjoy as needed. Enjoy!
