Olive Bread Bites

The delicious olive bread bites are ideal for serving at appetizers and buffets, best enjoyed with cold cuts and cheeses. They are very simple to make and require a few hours of rising; freshly baked, they will emit an irresistible aroma that will permeate the entire kitchen. For lunches with friends and family, or for special occasions, you can prepare these bites and offer them as an alternative to bread. Success is guaranteed and they will ask you to make them again!

Ingredients

  • 4 cups All-purpose flour
  • 0.35 oz Fresh yeast
  • 1 cup Pitted olives
  • 3/4 cup Milk
  • 1/3 cup Water
  • 2 tbsps Extra virgin olive oil
  • 1 tbsp Salt
  • 1 tbsp Sugar

Preparation

  • To make the olive bread bites, dissolve the sugar and fresh yeast in the lukewarm milk. In a bowl, or in the mixer, pour the flour and the milk and yeast mixture, and start mixing.

  • Incorporate the extra virgin olive oil and lukewarm water. Once the liquids are fully mixed into the dough, add the sliced olives and salt.

  • Knead until you get a smooth and even dough. Form a ball and place it in a bowl covered with a cloth. Put it in the turned-off oven with the light on and let it rise for two hours.

  • After the rising time, divide the dough into 15 equal parts. Shape the bites into round forms.

  • Place them on a baking sheet lined with parchment paper and cover with a cloth. Let them rise for another hour.

  • After the last rise, bake the olive bread bites in a preheated oven at 356°F for 30 minutes, until golden. Serve warm and enjoy!
