Tiramisu Cupcakes

The tiramisu cupcakes are delicious treats filled with a delightful mascarpone cream and soaked with coffee. For the garnish, I made a butter and mascarpone frosting and decorated with a dusting of cocoa and chocolate-covered coffee beans. These soft tiramisu cupcakes will disappear in no time and bring joy to everyone: young and old alike!

Ingredients

  • 1 1/4 cups Flour
  • 2 tsp Baking powder
  • 3/4 cup Sugar
  • 6 tbsps Butter
  • 1 tsp Vanilla extract
  • 3 Egg whites
  • 1/3 cup Sour cream*
  • 1/3 cup Milk
  • 2 tbsps Water
  • 1/3 cup Sugar
  • 4.5 oz Mascarpone
  • 1/2 cup Heavy cream
  • 1 Coffee
  • 8 tbsps Butter (at room temperature)
  • 1/2 cup Powdered sugar
  • 2 tbsps Coffee
  • 4.5 oz Mascarpone
  • to taste Coffee beans or chocolate chips
  • to taste Unsweetened cocoa powder

Preparation

  • *Sour cream: whip one cup of fresh cream, add a teaspoon of lemon juice and 1/2 teaspoon of salt.

  • To make the tiramisu cupcakes, beat the butter and sugar for about 2-3 minutes until fluffy. Add the vanilla extract and sour cream, and mix until well combined. Whip the egg whites until stiff peaks form, then gradually fold them into the mixture in a downward motion.

  • In another bowl, mix the dry ingredients (flour and baking powder), while in another, mix the milk with water. Add half of the dry ingredients to the butter and egg white mixture created earlier, and mix until well incorporated using a downward motion. Add the milk and water mixture, then fold in the remaining dry ingredients.

  • Prepare a cupcake pan with liners and fill them 3/4 full. Bake in a preheated oven at 350°F for about 20 minutes, using a toothpick to test for doneness. Once baked, remove them from the oven and let them cool.

  • Combine the mascarpone with the sugar, then fold in the whipped cream using a downward motion. Once the cupcakes are cool, create a hole in the center using an apple corer, pressing gently and being careful not to break the treats. Soak the inside with coffee and fill the cavity with mascarpone cream.

  • Prepare the frosting. Cream the butter at room temperature, then gradually add the powdered sugar. Add the mascarpone and coffee until the desired consistency is reached. Transfer the cream to a piping bag and decorate the cupcakes.

  • Garnish each cupcake with a dusting of cocoa and chocolate-covered coffee beans or chocolate chips. The treats are ready to serve and taste!
