The pumpkin mini pizzas, easy to make and very tasty, are a great appetizer to offer to friends and family. Ingredients
- 1 butternut squash (small)
- 3.5 oz mozzarella (cubed)
- to taste tomato sauce
- 1 sprig dried oregano
- 1 bunch arugula
- to taste extra virgin olive oil
- to taste salt
Steps
To make the pumpkin mini pizzas, wash the pumpkin well, cut it into slices about 0.5-1 inch thick, and remove the peel.
Line the baking sheet with parchment paper and place the pumpkin slices on it. Drizzle a little extra virgin olive oil on each slice, sprinkle with salt, and bake them in a preheated oven at 392°F for 15-20 minutes. They will be cooked when a toothpick inserted into them feels soft.
In a bowl, season the tomato sauce with a little extra virgin olive oil, salt, and oregano. Cut the mozzarella into cubes.
Remove the pumpkin slices from the oven and top each slice with a tablespoon of tomato sauce and mozzarella cubes.
Return the pumpkin slices to the oven for 5 minutes, just enough time to melt the mozzarella.
Once ready, remove them from the oven and garnish with arugula, previously washed and dried. Serve and enjoy your meal!
