Fancy skewers are easy and quick to make. What I propose today is more than a recipe; it’s an idea for creating skewers to serve at a buffet or as an appetizer.
To make them, I used cherry tomatoes, olives, lettuce, and mozzarella bites; and to make them more appetizing, I also added puff pastry. Then, I seasoned them with extra virgin olive oil, salt, and oregano. Fresh and vegetarian skewers suitable for everyone!

Ingredients
- 1 roll puff pastry
- 10 cherry tomatoes
- 10 mozzarella bites
- 10 black olives
- to taste lettuce
- to taste dried oregano
- to taste extra virgin olive oil
- to taste salt

Steps
To make the fancy skewers, roll out the puff pastry and use a round cutter to cut out circles.
Place the circles on a baking sheet lined with parchment paper. Bake in a preheated oven at 400°F for 10-15 minutes, until golden.
Once baked, remove the puff pastry balls and let them cool on a wire rack.
Wash and tear the lettuce into pieces, then dry it. Wash and clean the cherry tomatoes, and drain the mozzarella bites.
Assemble the skewers in this order: take a skewer stick, insert a puff pastry ball, then a cherry tomato, a black olive, another puff pastry ball, a piece of lettuce, a mozzarella bite, and finally another puff pastry ball.
Place the skewers on a serving plate and drizzle with extra virgin olive oil, a pinch of salt, and a sprinkle of oregano. Serve and enjoy!

Storage
You can make fancy skewers well in advance. Once ready, you can place them on a plate or tray, cover them with cling film, and store them in the refrigerator until ready to serve.
