Shortcrust Pastry – Basic Dough

Shortcrust pastry is one of the basic recipes of pastry making. Very simple to prepare, it requires few and simple ingredients that can be found in all our kitchens. With this basic dough, you can make tarts and delicious cookies.

Personally, for tarts I use a different dough and use the shortcrust pastry to make cookies. How many times have you seen assorted cookies entering cafes or pastry shops? Now you can make them at home, easily and quickly. You’ll make everyone happy: young and old!

Shortcrust Pastry
  • Difficulty: Easy

Ingredients

  • 2 cups all-purpose flour
  • 1 egg yolk
  • 10.5 tbsp butter
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 pinch salt

Steps

  • To make the shortcrust pastry, pour the flour into a bowl, add the salt, and the cold butter cut into pieces. Knead until you get a sandy mixture.

  • Add the egg yolk, sugar, vanilla extract, and mix. It should be a homogeneous mixture; if at first it doesn’t come together quickly, don’t be discouraged and keep blending the ingredients. It will result in a very smooth and compact dough.

  • Form a ball, cover it with plastic wrap, and let it rest in the fridge for an hour.

  • After the resting time, with the help of a rolling pin, soften the shortcrust pastry and make cookies or tarts. Bake in a preheated oven at 350°F for 15 minutes.
