Chicken Cacciatore in electric pressure cooker. Here’s the recipe for this traditional dish, the way my mom and grandma used to make it. Since we modern and super busy women don’t have all the time in the kitchen that they did, welcome Instant Pot! What a great help, as I have already told you many times, the electric pressure cooker gives you a hand, actually two. We’re not at the point yet where you can go to work or the park with the kids and Robot Battista prepares everything for you, that’s a no, but this fabulous contraption invented by an engineer allows you to set the cooking of your succulent dishes and then let them cook completely autonomously. The chicken has been trained to get into the pot on its own after cutting all the vegetables and in 5 minutes everything is ready and clean, because first it tidies up the kitchen… Oh, no I was dreaming, but I assure you that it is a very valid aid in the kitchen.

Ingredients

  • 1.76 lbs chicken (A whole chicken in pieces or drumsticks and thighs)
  • 7 oz onion (white or blonde)
  • 2 carrots
  • 1 stalk celery
  • 4 tablespoons extra virgin olive oil
  • 7 oz peeled tomatoes
  • 2 tablespoons butter
  • Half glass red wine
  • to taste salt
  • 2 leaves sage
  • 1 bunch parsley

  • 1 electric pressure cooker
  • 1 Knife
  • 1 Cutting board

Steps

  • First, prepare the chicken. I usually remove the skin because too much fat in the sauce is not to my liking, but the original recipe did not require this. In my recipe, I used drumsticks and thighs, but a whole chicken cut into large pieces works just as well, as it was done in the past.

  • Also prepare the cleaned and washed vegetables. Chop the onion and cut celery and carrots into pieces. Please note, the celery and carrots should not be chopped but cut into pieces with a knife.

  • Turn on the electric pressure cooker on Sauté in Normal mode. Place the extra virgin olive oil and butter in the pot and add the chicken pieces. Brown them briefly on both sides then add the chopped onion.

  • When the chicken is browned and the onion is wilted, deglaze with the half glass of red wine.

  • Once the wine has slightly evaporated, you can add the vegetables, the diced celery, and carrots. Also add the tomato pulp. Stir the chicken pieces so that they are flavored.

  • Chop the sage leaves with the parsley, washed and dried, and put them in the pot. Salt the chicken sparingly. Cooking in the electric pressure cooker enhances the flavors.

  • At this point, you can close the lid of the Instant Pot and set the cooking to Pressure Cook, Normal, Low Pressure for 20 minutes. Remember to close the valve and let the pot work for you.

  • It might happen that once the chicken is cooked, there is too much liquid present in the pot; in this case, remove the pieces of meat and dry them in sauté mode.
