Gratinated Radicchio

Finally, I was able to try making gratinated radicchio… yes, because in the Netherlands it’s hard to find radicchio, unfortunately, I’ve rarely seen it and usually only the round one. Now this is not Treviso radicchio, I couldn’t aspire to that, but at least it’s the oblong-shaped one that works better for this recipe!

I had never tasted it like this, so when I saw it at the supermarket, evidently because at Christmas time you find a lot of more exotic and foreign foods here, I immediately grabbed it. Here it’s called roodlof and it almost looks like Belgian endive, which here is called witloof, but if I translate roodlof I find radicchio. So radicchio it is! But I think it would also be good with endive…

Enough of my usual chatter: it turned out delicious!!! And easier than this it can’t be: it takes 5 minutes to prepare and 10 or 15 minutes to cook. It was very well received here, here’s how I did it…

Ingredients

  • 4 heads radicchio (if they are large, only 2 will be enough)
  • 3/4 oz breadcrumbs
  • 2 tsp extra virgin olive oil (2 measuring teaspoons)
  • to taste salt
  • Points per serving = 2 WW points

Tools

  • Cutting board
  • Knife
  • Small bowl
  • Brush
  • Baking pan
  • Parchment paper

Preparation

  • Wash the radicchio heads and dry them. If they are small, it’s enough to cut them in half, otherwise into 4 wedges. I don’t remove the hard part, otherwise the leaves might come apart, so it can be discarded when eating. Place the radicchio wedges with the cut side up on a baking pan lined with parchment paper, brush the wedges well with oil, add a little salt, and sprinkle with breadcrumbs, pressing it with your fingers to make it stick well.

  • Preheat the oven to 437°F static or 392°F fan, bake and let it cook for 10 or 15 minutes until the surface is nicely golden. Remove from the oven and serve. But they are also good when cooled…
