Ingredients
Quantity for 14 mini pizzas
- 1 1/4 cups all-purpose flour
- 6 tbsp milk (lukewarm)
- 1/2 tsp fresh yeast
- 1 1/2 tbsp butter
- 1/3 tsp fine salt
- 1 tsp acacia honey
- 1/4 cup tomato puree
- 1/3 cup mozzarella
- 4 fillets anchovies in oil
- 8 taggiasca olives (pitted)
- 1 tsp dried oregano
- 2 tbsp extra virgin olive oil

Steps
Pour the lukewarm milk into a bowl and dissolve the yeast, add the flour and mix to absorb the milk. Add the butter, honey, salt, and finish kneading. Place the dough in a bowl, cover, and let it rest for 20 minutes, then knead it again, fold it, and let it rise for 2 hours.
After the time has passed, divide the dough into portions of 20 grams (about 3/4 oz), form balls by folding multiple times, and place them spaced apart on a baking sheet with parchment paper underneath. Cover with plastic wrap and let rise for another 2 hours until doubled.
Preheat the oven to 355°F fan mode or 390°F conventional
Using the bottom of a small glass, press the balls in the center and top them with tomato puree, pieces of mozzarella, anchovies, and olives. Salt, sprinkle with oregano, drizzle a bit of oil, and bake in the middle of the oven. Cook for 10 minutes and remove the Buffet Mini Pizzas from the oven.
Buffet Mini Pizzas are also good served cold, but they can be reheated in the oven for a few minutes before serving.
Better not to reheat them in the microwave as they would become soggy.
