Ingredients
- 1 1/4 cups all-purpose flour
- 3/4 cups pistachio spread
- 1 egg
- 3 1/2 oz white chocolate
- colored sprinkles
Preparation of the Pistachio Cookie Tree with White Chocolate
Prepare the cookies.
In a large bowl, pour the flour and make a well in the center.
Add the pistachio spread and the egg and mix until you get a homogeneous dough.
Form a dough ball and wrap it in plastic wrap.
Let it rest for half an hour in the refrigerator.After the resting time, on a floured work surface, with the help of a floured rolling pin, roll out the dough and cut out the cookies with round cookie cutters of various sizes, cutting as many small ones as large ones (you’ll need them to create the thickness between the tree layers), re-kneading the dough scraps until it’s used up (you can create small cookies with other shapes, such as stars or little trees to use as the tree topper).
Preheat the oven to 340°F in static mode.
Place the cookies on a baking sheet lined with parchment paper and bake them for ten minutes, then remove them and let them cool completely.Chop the white chocolate and melt it in a bain-marie or microwave.
Put the colored sprinkles on a plate.
Dip the edge of the cookies in the melted chocolate and pass it in the colored sprinkles.
Let the cookies dry for ten minutes in the refrigerator.
Assemble your pistachio cookie tree with white chocolate by arranging the cookies from the largest to the smallest, gluing them with the melted white chocolate and spacing them with a small-sized cookie.
Decorate the remaining cookies with the melted chocolate and let dry completely.
