CABBAGE WITH RAISINS AND ONION

Cabbage with raisins and onion, a tasty and delicious side dish, easy and quick to prepare. It goes well with different types of main courses but has something particularly good with cheese; if you like, you can also use the cabbage as a pasta topping or serve it on toasted bread slices.

Ingredients

  • 2.2 lbs savoy cabbage
  • 3/4 cup raisins
  • 1 cup yellow onion
  • 3 tbsps butter
  • 2 tbsps olive oil
  • to taste salt
  • to taste black peppercorns
  • to taste water

Cabbage with Raisins and Onion Preparation

  • First, place the raisins in a small bowl, cover with room temperature water and set aside.

  • After cleaning and removing the tougher outer leaves of the cabbage, cut it in half and remove the inner core.

    Then slice it into strips no wider than 1/4 inch.

  • In a wok, pour 2 tablespoons of olive oil, add the butter and the onion sliced into julienne.

    Melt the butter well and sauté the onion for about 3/4 minutes over medium-low heat.

  • Once the onion is ready, add the cabbage and cook over medium heat without a lid for 8/10 minutes, stirring occasionally.

  • After the cabbage cooking time, drain and squeeze the raisins, then add them to the cabbage.

    Mix well and cook for a couple of minutes.

    Salt and pepper to taste.

  • And voilà… the cabbage with raisins and onion is ready to be served.

Useful Tips

With the cooking times I indicated, the cabbage remains cooked but not too mushy; if you prefer a more cooked cabbage, adjust according to your taste.

As for the onion, you can also use white or even red onion.
